Instructions
Prepare the Zucchini
Grate the zucchini and squeeze out excess moisture using a clean kitchen towel or paper towels.
Mix Dry Ingredients
In a large bowl, whisk together almond flour, sugar-free sweetener, baking powder, cinnamon, and salt.
Combine Wet Ingredients
In another bowl, beat the eggs, then add melted coconut oil and vanilla extract. Mix well.
Combine Wet and Dry Ingredients
Add the wet ingredients to the dry ingredients and mix until well combined. Fold in the grated zucchini.
Bake the Bread
Pour the batter into a greased loaf pan and bake at 350°F (180°C) for 45-50 minutes, or until a toothpick inserted comes out clean.
Cool and Serve
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
