Ingredients
1/2 cup Raw cashews Soaked for 4 hours or boiled for 10 minutes
1/4 cup Plant-based milk Almond, soy, or oat milk
2 tbsp Lemon juice Freshly squeezed
1 tbsp Dijon mustard Adds tanginess
1 tbsp Capers Optional, for extra flavor
1 clove Garlic Adjust to taste
1 tbsp Nutritional yeast Adds a cheesy flavor
1/2 tsp Sea salt Adjust to taste
1/4 tsp Black pepper Freshly ground
2 tbsp Olive oil Optional, for extra creaminess
Instructions
Soak Cashews: Soak raw cashews in water for 4 hours or boil them for 10 minutes. Drain and rinse.
Blend Ingredients: Add soaked cashews, plant-based milk, lemon juice, Dijon mustard, capers, garlic, nutritional yeast, salt, and pepper to a high-speed blender. Blend until smooth and creamy.
Adjust Consistency: If the dressing is too thick, add a splash more plant-based milk. Blend again until smooth.
Taste and Adjust: Taste the dressing and adjust seasoning. Add more garlic, lemon juice, or salt as needed.
Rest: Transfer the dressing to an airtight container and refrigerate for at least 30 minutes to let the flavors meld.
Serve: Drizzle over salads, use as a dip, or as a sauce for roasted vegetables. Enjoy!
